  1. Preheat oven to 390F.
  2. Place fish in a roasting pan, scatter with the tomatoes, olives and capers, then drizzle with olive oil.
  3. Season with salt and pepper.
  4. Bake for 15 minutes.
  5. Remove pan from oven, cover with foil and leave it to rest for 5 minutes.
  6. Divide the fish, tomatoes, olives and capers among 4 plates.
  7. Stir the vinegar into the pan juices and spoon over the fish.
  8. Serve with salad leaves!
